We love meatloaf, but add in some cheddar and BBQ sauce and they pretty much will rock your world. Added benefit if you make them little they will be done in less than 30 minutes, great for an easy weeknight meal!!
- 1/2 large onion chopped
- 2 tsp of butter
- 1 lb organic ground beef
- 1 egg
- 1/4 cup BBQ sauce (we use Rudy's)
- 1/2 cup oatmeal (ground)
- 1 cup shredded cheddar cheese
- 2 TB BBQ sauce
- Preheat the oven 425 degrees. Saute onion in butter, let cool. (You can skip this step, but we found the onions a little crunchy otherwise). Mix ground beef, 1 egg, 1/4 cup BBQ sauce, oatmeal and 3/4 cup shredded cheese. I mix it with my hands just until combined. Form them into 4-5 mini loaves. Brush the tops with the 2 TB of BBQ sauce and sprinkle with the remaining cheese. Bake at 425 for 20-25 minutes or until no longer pink.
