I really enjoy meal planning and cooking, but it can be exhausting and frustrating. This usually happens when I am need some new ideas, or I’m just extra busy or kids are driving me a little nuts. This is my attempt to share some of our weekly dinners to make meal planning just a tad easier. Here are our family’s dinners for this week!! I usually cook about 5 times a week and we eat leftovers two nights. This can vary, but if I don’t end up cooking one night I just save that recipe for a repeat next week.
*These recipes I find fall mostly in the fairly healthy/whole foods category, but some I make a few modifications and will add the notes under each one if I do. Feel free to adapt to y’alls needs. I usually pair our main dish with some salad or roasted veggie, they’re our favorite right now.
Wednesday: Going with an old stand-by that’s seriously just a dump and pour recipe!! Love my Tex-Mex Chili!! *You could make it a little lighter with ground turkey and we change up the type of beans to whatever I’m in the mood for
Saturday: Trying a new one from my Pinterest “Recipes to Try” Board A Korean Beef Bowl…bonus it’s super fast to make!! *I reduced sugar amount to 1/4 cup and will try it with some honey in the future.
Sunday: We are staying in a rented furnished condo right now waiting for a house to be ready and found an old Weight Watchers cookbook in the kitchen, this Chicken Carnitas looked like a winner. *I’ll add rotel instead of just diced tomatoes
